Recipe | Sirloin steak with courgette ribbons

Sirloin steak with courgette ribbons, garnished with sesame seeds, chilli and coriander
I’m a firm believer that sometimes the simplest recipes and ideas are the tastiest. In fact, I see it as a challenge to create something incredible with just a handful of ingredients – like this beautiful Asian-inspired recipe. All you need is a couple of steaks and courgettes and then a cupboardful of staples for the marinade. It’s also a super quick recipe – easily made in 15 minutes – and most of that time is spent marinating.

I love steak and the flavours in this dish are delicious. It’s a fairly typical Asian marinade that can also easily be found online. Trust me when I say looks are deceiving and this is surprisingly filling. You’ll want to make it in an instant!

The recipe serves 2 but can easily be halved/doubled to suit. Just ensure you use one steak and one small courgette per person – and experiment with the marinade, if you like.

Ingredients
  • 2 sirloin steaks
  • 2 small courgettes (or one large courgette)
For the dressing
  • 2 tbs sugar 
  • 4 tbs water 
  • 4 tbs soy sauce (I use reduced salt) 
  • 1 tsp fresh ginger, grated 
  • 1 tbs sesame oil 
  • Juice of 1 clementine
To garnish
  • 1 tsp sesame seeds 
  • 1 bunch fresh coriander, chopped (or 1 tsp coriander leaf) – optional 
  • 1 tsp chilli flakes – optional
Method
  • Leave the steaks at room temperature for 10 minutes prior to cooking 
  • Cut the courgettes lengthways in half, and use a peeler or mandolin to cut thin slices/ribbons 
  • Make the dressing by heating the sugar and water in a small pan and stir until dissolved. Add the soy sauce, ginger, sesame oil and clementine juice. Stir and transfer to a bowl. Set aside 
  • Soak the courgette for 5 minutes. Transfer to a serving plate. Place the steaks in the marinade and leave for 5 minutes 
  • Heat some oil in a frying pan/griddle and cook the steaks to your liking (I went for 2-3 minutes each side) 
  • Place the steak on top of the courgette and garnish

I got this recipe years ago from a card at Waitrose – but I couldn’t find it anywhere online. This was the first time I made it, but it was such a success, I had to share it on the blog and I’ll definitely be making it again. You could always swap the steak for chicken breasts or boneless thighs!
