Perfect
for barbecue season, or – if in true Great British style it rains – indoor
grilling, these skewers are incredibly easy to assemble and are so tasty! If
you’re a vegetarian, omit the chicken; if you don’t fancy chicken, try pork or
steak; and go wild with whatever veg you have lying around! This recipe will
make four skewers.
Ingredients

Two
chicken breasts
·
One
packet of Halloumi (I used the light version)
·
One
red pepper
·
One
courgette
·
Paprika
(for dusting)
Method
·
If
using wooden skewers, prepare them by soaking them in water
·
Meanwhile,
dice the chicken on one chopping board and on another, dice the halloumi and
peppers and slice the courgette
·
Thread
all the ingredients on the skewers alternatively, beginning with the chicken
·
Sprinkle
both sides of the skewer with paprika and grill for 15 minutes, turning once.
Ensure the chicken is cooked by slicing into the biggest chunk
·
Serve
I
served my skewers with toasted wholemeal pitta and drizzle of sour cream, but
you could serve yours with sweet potato fries/wedges, a large mixed salad or spicy
rice.
