So
after running a poll following my ‘This Week for Dinner’ post, you all wanted
to see this super quick and easy pasta recipe. And it is really easy too –
using minimal ingredients and utensils. As a rule, I tend to only eat pasta
once a week (and always whole wheat, too) but this is fast becoming one of my
favourites and I could easily eat it again and again!
This
recipe will serve two – or possibly stretch to leftovers for a third portion,
depending on your appetite.
Ingredients
·
An
onion, diced
·
8
mushrooms, sliced or quartered
·
4
pork sausages (I used Heck!), chopped
·
150g
whole wheat pasta (I used fusilli)
·
6
stalks of tenderstem broccoli
·
A
red pepper, sliced
Method
·
Cook
the pasta in boiling water for 12-15 minutes
·
Meanwhile,
fry the onions, mushrooms and sausage over a medium heat. I always use Frylight
·
Five
minutes from the end of the pasta cooking, add the tenderstem broccoli and cook
through
·
Add
the red pepper to the sausage and vegetable mixture and carry on frying until
the sausages have cooked through
·
Drain
the pasta and broccoli, before adding the pan mixture and stirring well
