Baking with Kids | Five Ingredient Easter Flapjacks

Let’s be honest, it doesn’t get much easier than flapjacks, and these ones are really delicious. I’ve seen a lot of recipes suggesting to blitz the oats down slightly, but I much prefer a chunky rustic flapjack with a bit of texture. Rather than the usual golden syrup, I went for maple, and these give it a nice colour, as well as taste. They probably could have done with a couple more minutes in the oven, but we were due on an Easter egg hunt, plus they were super crumbly, so more syrup was needed.

Of course, flapjacks are not just for Easter, and feel free to top them with whatever you have lying around. I went for the Kit Kat mini eggs, and they were lush. I was also really generous with my slices, cutting these into 9 rather than 12 pieces. But who’s judging?

Ingredients

  • 250g porridge oats 
  • 125g butter 
  • 125g caster sugar 
  • 2-3tbs maple syrup (or golden syrup, if you prefer) 
  • 9 Kit Kat eggs (or whatever you fancy for topping each slice)

Method

  • Preheat the oven to 180C fan/gas mark 6 
  • Line a 20x20cm tin with baking paper, or grease with butter 
  • In a large bowl, mix together the oats, butter, sugar and syrup until well combines 
  • Spoon the mixture into your lined/greased baking tray. Press down to ensure the mixture is flat, level and has reached all four corners of your tin 
  • Top with Kit Kat eggs (or your choice of topping) and then score into your portions (9 or 12!) 
  • Bake for 15 minutes, or until golden brown 
  • Transfer to a wire rack and leave to cool. 
  • Slice up and enjoy!

I think I enjoyed these much more than Alfie, who called it “porridge cake”. But I definitely want to make flapjacks or breakfast granola bars again soon. I love oats for breakfast.
