I’ve
been meaning to post this recipe for a couple of weeks now, ever since I last
made it in fact. I’ve made it twice and both times, it’s been a huge hit with
the family (yes, even Alfie!). I have Kitchen Stories to thank for this gem and
totally recommend downloading the app. This isn’t an ad or collaboration or
anything like that, I just really like the app and find plenty of inspiration
for mealtimes on there.
Whether
you’re just starting out in the kitchen, are a bit of a foodie or simply aiming
to impress (your partner, or for a dinner party), there are hundreds of free
recipes. Not only that, but there are tips, articles and videos along the way
too. I’ve already got three personalised cookbooks full of recipes to try (or
ones I’ve already tried and love) and you can even add the ingredients you need
to your shopping list.
One
of the best things about the app is that you can add photos once to the recipes
once you’ve cooked them and also add comments – say for example, you adapt the
recipe in some way, you can let the community know and it may well inspire them
next time. This recipe originally called for tagliatelle, but I only eat
wholewheat pasta and so, cooked this with brown linguini... I can’t imagine it
really made that much difference and you could always use fettuccine, spaghetti
or pappardelle.
This
recipe serves two, although I managed to stretch a toddler-sized portion out of
it, too.
Ingredients
·
150g
linguini (or whichever pasta you choose)
·
2
skinless salmon fillets
·
2
large handfuls of spinach
·
1
clove of garlic
·
½
tbs butter
·
150ml
double cream
·
Seasoning
to taste
·
Parmesan
to serve
Method
·
Peel
and finely chop the garlic
·
Melt
the butter in the frying pan and gently sauté the garlic, until golden but not
burning
·
Add
the cream and leave to simmer on a medium heat
·
Wash
the spinach and add to the cream. Cook until wilted
·
Meanwhile,
cook the pasta according to the packet’s instructions and then drain
·
Chop
the salmon and add to the frying pan. Add the pasta and mix well, before
cooking for 3-4 minutes
·
Season
and serve with the grated parmesan
